The link for the first box of spring!  How did that happen?  Where has the year gone?

We have had a little, tiny taste of sun and a hint of the better weather to come, but winter is coming back to nip at our heels agin this weekend so make the most of these wonderful soup veggies to keep warm.  If selling the cabbage to the family is getting tricky, here is a link to a wealth of cabbage recipes – surely something for everyone here!

Tangelos make their appearance in the boxes this week.  For those who haven’t come across them very often, Tangelos are a cross between a tangerine ( a relative of the mandarin) and grapefruit.  They are around through the winter and are quite juicy and easy to peel – great for lunch boxes – and they make excellent cordial and marmalade.  Home made cordial is just simplicity itself to make, tastes fantastic, has no funny colouring agents, makes a great gift if bottled nicely and is a good way to use up excess winter citrus fruit.  This is an old recipe and, obviously, any citrus can be substituted.  Citric acid is a natural preservative.

Orange and Lemon Cordial

3 oranges, juice and rind
3 lemons, juice and rind
5 cups water
1 kilo sugar
30 gms citric acid

Bring water, sugar, acid and rind to boil, dissolving sugar. Remove from heat, add juice.
Bottle in sterilized bottles when cooled. Strain if desired.
Printable recipe ORANGE AND LEMON CORDIAL.
