Back in June’s In My Kitchen post, one of the local treasures that was in my kitchen was the delicious La Casa del Formaggio cookbook called “Famiglia”. This heartwarming book is full of the kind of recipes that make us all wish we had an Italian nonna to spoil us. It was compiled using recipes from La Casa del Formaggio’s own Rosa Cicchiello – hearty, traditional dishes that the late Rosa served to her own family, who now currently run the family business.
Many culinary traditions are passed down within families orally and if someone doesn’t think to record them (like my grandmothers delicious, but now lost, potato scones, for example) they can disappear. Part of the objective with this book was to preserve some of those traditional recipes for the future. Many recipes vary from region to region and the book also serves to fix Rosa’s versions of these dishes for everyone to enjoy.
In the introduction Rosa’s children share with us some of their own special memories of their parents and the food that brought the family together. The recipes range from ‘primi’, right through to ‘dolce’ and feature some of the dishes that are significant to Rosa’s family, like her ricotta rice cake and her famous pizza piena – dishes which will quickly become significant to yours.
