Method
- Preheat oven to 160C, grease and flour a bundt pan
- Combine flour, baking powder and salt in a bowl, whisk with a fork or balloon whisk to blend thoroughly.
- Add remaining ingredients to your food processor and whizz until creamy - approximately one minute.
- Add dry ingredients and pulse until well combined.
- Pour batter into prepared bundt pan and bake for 30-35 minutes.
- Cake is baked if it bounces back when lightly pressed, or if an inserted skewer comes out dry.
- Cool for 5 minutes in tin, before turning out to cool completely on a rack.
Frosting
- Combine sifted icing sugar and juice in a small bowl and whisk, pour over cooled cake and allow to set before serving.
