What’s in the box August 18/19

The weather at this time of the year is making things a little tricky for our local growers – while we love the rain and wouldn’t dare to complain about it, it does bring some issues with it!

I haven’t given many ideas for the lemons, because I assume that we all just love them and can use them up, but if anyone wants some ideas – please put your hand up! The mandarins, apples and oranges are such lunch box staples that I’m sure they are easily dealt with, too.

I love the sweetness of carrots and they make a brilliant dip that can be as versatile as your ideas are! Cook up your carrots – either steam them, cook slowly in a frypan with some oil or, to maximise the sweetness roast them until soft – then blend with a selection of any of the following to make the dip of your dreams!
thick greek-style yoghurt
light sour cream
tahini
garlic
cumin
coriander
paprika
honey
sweet chilli sauce
lemon rind or juice

For something a little different with potatoes and spring onions, try mashing some cooked spuds and, when cold, adding chopped spring onions, salt, chopped fresh parsley and an egg to bind it together. Shape into patties and fry in hot oil until golden – the kids will love them! Again, if you want to beef up the flavours try adding some chilli, cumin seeds, chopped fried bacon – whatever.

    I remember the mash with spring onions, parsley & egg too…., its a really lovely snack, or dinner or anytime…, thanks….. I’d sort of forgotten that old one 🙂
